How we got here

I have many special food memories from childhood that I cherish. One such memory is inspiring my next career move! After a fantastic 30 year run in the insurance industry, I’m embarking on a waffle and coffee fueled journey in Richmond, VA!

We used to go to the beach in the summer growing up in Belgium. Along the boardwalk, alongside arcades and bike rental shops, you’d find these incredible waffle shops. For the equivalent of about 50 cents you’d get an incredible Liège waffle - crispy on the outside, a soft middle and sugar explosions with every bite. You see, the secret ingredient is pearl sugar mixed in throughout this doughy marvel. 

Sharing this memory was the starting point on this adventure. From there I added coffee to the menu, cold brew and nitro infused to be precise. What a combination! To tie it all together, I added my passion for another great Belgian export - cycling - by naming each menu combination after some of the world’s greatest bicycle races.

I’ve imported 2 waffle irons from Liège, Belgium - 44 lbs of cast iron each! I found a nitro infuser that extracts nitrogen from the ambient air to minimize waste and will power it all with a rechargeable battery pack, purpose made by an outfit in Boise, ID. My goal is to limit my carbon footprint where I can. I won’t be perfect, but each decision I make will include an environmental impact assessment.
